Grilled Ribs with Barbecue Sauce
Ingredients
- Pork Skewers - 3 lbs
- Spanish onions - 1 piece
- Worcestershire Sauce - 1 fl oz
- Ketchup - 5.3 oz
- Red Wine Vinegar - 1 fl oz
- TABASCO® - to taste
- Brown Sugar - 1.8 oz
- Water - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- English Dry Mustard - ½ tablespoon
Step by Step guide
Step 1
Combine the ingredients for the sauce in a small saucepan.
Step 2
Bring to a boil over medium heat and let simmer for about 15 minutes.
Step 3
Remove the saucepan from the heat and season the sauce with pepper and salt.
Step 4
Using a teaspoon, carefully separate the membrane from the ribs (the membrane on the hollow side of the ribs). By lifting one corner of the membrane with a spoon, you can easily pull it off with your hands.
Step 5
Season the ribs with salt and pepper.
Step 6
Preheat the Big Green Egg grill, place the rack inside, and set the temperature to 248°F.
Step 7
Once the grill reaches the specified temperature, slightly lift the rack and spread the soaked Cherry Wood Chips over the hot coals.
Step 8
Place a rectangular tray on the rack, pour water into it, and place the stainless steel grill grate in the grill.
Step 9
Insert the V-shaped rack, place the ribs on it, and brush them with barbecue sauce. Close the grill lid.
Step 10
Baste the ribs with sauce every 15 minutes.
Step 11
Depending on their thickness, the ribs will be ready in about 2.5 hours. The finished ribs should easily separate from each other.
