Ingredients
- Coho salmon fillet - 21.2 oz
- Spinach - 2 lbs
- Herbs - 1 bunch
- Minced garlic - 2 teaspoons
- Tomatoes - 6 pieces
- Sun-Dried Tomatoes - ½ cup
- Lemon - 2 pieces
- Fresh basil leaves - to taste
- Dried Turkey - 1 tablespoon
- Olive Oil - ½ cup
- Anchovy fillet - 0.4 oz
- Ocean salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare the marinade: mix 1 teaspoon of minced garlic with sun-dried tomatoes in oil, the flesh of 1 lemon, and basil.
Step 2
Marinate the salmon fillet for 4–6 hours. Grill the marinated fish on a rack or in a pan.
Step 3
Blanch the washed spinach leaves in boiling water, then sauté in oil with 1 teaspoon of minced garlic and 4 chopped tomatoes.
Step 4
Prepare the sauce: mix the chopped flesh of 2 tomatoes with diced sun-dried tomatoes, minced anchovies, the flesh of 1 lemon, olive oil, and basil. Season with salt and pepper.
Step 5
Place sautéed spinach on the cooked salmon pieces and garnish with herbs. Drizzle the dish with the sauce.
