Ingredients
- Hawthorn leaves - 1 bunch
- Dandelion leaves - 1 bunch
- Scallops - 16 pieces
- Olive Oil - to taste
- Salt - to taste
- Ground Black Pepper - to taste
- Ciabatta - 1 piece
- Anchovy fillet - 10 pieces
- Lemon - 1 piece
- Ramp greens - 0.7 oz
- Fresh Rose Hips - 2 tablespoons
- Olive Oil - 5 tablespoons
Step by Step guide
Step 1
For the dressing, crush the anchovy fillets and lemon juice in a mortar. Add finely chopped ramps and rosemary. Mix and transfer to a bowl. Add a small amount of olive oil.
Step 2
Rinse the hawthorn and dandelion leaves well.
Step 3
Brush the scallops with olive oil, and season with salt and pepper to taste.

Preheat the grill. Grill the scallops for about 2 minutes on each side until cooked through and golden brown.
