Soak wood chips from pear, apple, or mesquite trees in cold water for 8 hours. Drain and wrap the chips in aluminum foil. Make a few holes in the foil.
Step 2
Rub the fish with salt and pepper, wrap it in plastic wrap, and let it sit for a while.
Step 3
Preheat the grill. Place the foil with the wood chips on the coals. Grease the grill with vegetable oil and place the fish skin-side down. Grill, turning occasionally, for about 5-7 minutes on each side until cooked through. Serve with red wine sauce.
