- Garlic - 1 clove
- Olive Oil - 1 fl oz
- Lemon - 2.1 oz
- Safflower Oil - 4 fl oz
- Arugula - 0.2 oz
- Romaine lettuce - 0.2 oz
- Marinated cherries - 0.7 oz
- Soy Sauce - 0 fl oz
- Honey - 0.7 oz
- Champagne Vinegar - 0 fl oz
- Balsamic Vinegar - 0 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Finely chop the garlic and mix it with olive oil.
Step 2
Prepare the dressing. In a small bowl, combine 100 ml of vegetable oil, honey, soy sauce, wine vinegar, and balsamic vinegar, and whisk together.
Step 3
Clean the squid by removing the membranes, rinse it, season with salt, brush with vegetable oil, and grill for 2 minutes on each side. As soon as it turns white, transfer it to a plate, sprinkle with pepper, and drizzle with garlic-infused olive oil (1 tablespoon) on both sides. Avoid long grilling to prevent it from becoming tough and rubbery.
Step 4
Cut the cherry tomatoes into quarters, mix with the salad greens, season with salt and pepper, and toss with a small amount of dressing.
Step 5
Serve the squid with a salad and a wedge of lemon.
