- Steaks - 4 pieces
- Potato - 8 pieces
- Asparagus - 12 stalks
- Lemon - ½ pieces
- Olive Oil - 2 fl oz
- Butter - 2.1 oz
- Vegetable Oil - 2 fl oz
- Rosemary - 0 oz
- Thyme - 0 oz
- Salt - to taste
- White Pepper (whole) - to taste
Step by Step guide
Step 1
Boil the potatoes, removing them from the heat a couple of minutes before they are fully cooked — they should remain firm. Let them cool, then cut them lengthwise in half.
Step 2
Peel the asparagus and plunge it into boiling water for two minutes, then transfer it for one minute into ice water — the cold helps preserve the color of the product, as the asparagus will turn a reddish hue if left in the heat.
Step 3
Remove the leaves from the thyme and rosemary sprigs and chop them finely. Rub salt into the herbs to release more juices, add pepper, pour in 60 ml of olive oil and lemon juice, and mix well.
Step 4
Season the steaks with pepper and grill them in a grill pan with vegetable oil. Also season the potatoes and asparagus with pepper and grill them separately in a grill pan, but with butter, until they are golden brown. While grilling, drizzle the vegetables with a dressing made from lemon juice, olive oil, and herbs.
