Grilled Sweet Potato Baba Ganoush
Ingredients
- Olive Oil - ¼ tablespoon
- Sweet Potato - 31.7 oz
- Lemon Juice - 3 tablespoons
- Tahini - 2 tablespoons
- Garlic - ½ clove
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Sumac - to taste
- Aleppo pepper - to taste
- Pita bread - to taste
Step by Step guide
Step 1
Preheat the grill to medium heat. Lightly oil the grill grate.
Step 2
Grill the sweet potato for 50-60 minutes, turning occasionally, until tender and slightly charred on the skin. You can also roast the sweet potato in the coals after grilling something else.
Step 3
Wait until the coals are completely covered with ash and there are no black spots left.
Step 4
Shake the grill to remove excess ash from the coals, then spread the coals and place them around the sweet potato. Let it cool slightly.
Step 5
Cut the sweet potato in half, scoop out the flesh with a spoon, and place it in a food processor. Add the lemon juice, tahini, garlic, and ¼ cup of oil and blend until smooth; season with salt and pepper.
Step 6
Drizzle the baba ganoush with oil. Serve with flatbreads or pita.
