- Tuna - 5.3 oz
- Avocado - 7.1 oz
- Cilantro - 0.4 oz
- Orange Bell Peppers - 1.8 oz
- Crushed ice - 1.8 oz
- Lime - 1 piece
- Furikake seasoning - 0.1 oz
- Olive Oil - 1 fl oz
- Scallions - 1.1 oz
Step by Step guide
Step 1
Prepare the green onion oil. Blend olive oil with chopped green onions using a blender. Then strain the mixture through a double layer of cheesecloth to remove the sediment.
Step 2
Prepare the miso butter. Whisk the miso paste and softened butter together until well combined.
Step 3
Prepare the avocado cream. Blend the flesh of the avocado with cilantro leaves, green pepper, ice, the zest of a whole lime, and 30 ml of its juice until smooth.
Step 4
Using a brush, coat the piece of tuna with miso oil on all sides. Grill on a barbecue or grill for 3 minutes, flipping once.
Step 5
Place the sautéed fillet on a plate, sprinkle it with furikake seasoning, and arrange the avocado cream beside it. Drizzle with green onion oil and serve.
