Ingredients
- Eggplants - 1 piece
- Young zucchini - 1 piece
- Spanish onions - 1 head
- Sweet Pepper - 1 piece
- Tomatoes - 1 piece
- Olive Oil - 1 fl oz
- Balsamic Vinegar - 1 tablespoon
- Garlic - 1 clove
- Herb Bouquet - to taste
- Herbs - to taste
Step by Step guide
Step 1
Slice the eggplant into rounds about 1 cm thick.
Step 2
Slice the zucchini into rounds.
Step 3
Slice the red onion into thick rings.
Step 4
Cut the pepper in half, remove the seeds and membranes, and then cut each half into two pieces.
Step 5
Slice the tomato into rings.
Step 6
Finely chop the garlic.
Step 7
In a bowl, combine olive oil, balsamic vinegar, salt, and freshly ground pepper.
Step 8
Add dried herbs to taste — this could be a blend of Provence herbs, rosemary, thyme, or oregano.

Place the chopped vegetables in a bowl and mix them by hand to ensure each piece is coated with oil.

Grill the vegetables on the barbecue rack. Start with the peppers, which will need 10 minutes. After 2 minutes, add the eggplants (they will need a total of 8 minutes), then after another minute, add the zucchini (they require 5–7 minutes). Finally, add the tomatoes and onions. Remove all the vegetables from the grill at the same time.

Serve the vegetables sprinkled with chopped herbs.
