Grilled Vegetables with Goat Cheese
Ingredients
- Olive Oil - to taste
- Eggplants - 4 pieces
- Tomatoes - 8 pieces
- Green onions - 2 bunches
- White Wine Vinegar - 2 tablespoons
- Garlic - 3 cloves
- Goat cheese - 7.1 oz
- Basil leaves - ⅓ cup
- Corn tortillas - 8 pieces
Step by Step guide
Step 1
Combine the sliced eggplants (about 1 cm thick), tomatoes, and all the green onions in a large shallow bowl.
Step 2
Mix olive oil, white wine vinegar, and garlic with plenty of seasoning, add to the vegetables, and mix well.
Step 3
Grill the eggplants on each side until cooked, about 4-5 minutes.
Step 4
Transfer to a large shallow bowl. Sauté the tomatoes and green onions for 3-4 minutes.
Step 5
Add to the eggplants. Crumble the goat cheese over the hot vegetables and drizzle with olive oil. Toss to combine.
Step 6
Serve topped with crumbled basil leaves.
Step 7
Warm the tortillas on the grill for 1-2 minutes, flipping once.
Step 8
Place the vegetables with cheese on the tortilla.
