Grilled Zucchini and Pecorino Salad
Ingredients
- Courgette - 6 pieces
- Olive Oil - 2 fl oz
- Garlic - 2 cloves
- Red Wine Vinegar - 1 fl oz
- Ocean salt - to taste
- Ground Black Pepper - to taste
- Chopped Sage Leaves - 0.5 oz
- Grated Pecorino Pepato Cheese - 1.1 oz
Step by Step guide
Step 1
Trim the ends of the zucchinis and cut them in half lengthwise. Then slice each half into thin, long pieces.
Step 2
Heat the olive oil in a skillet and sauté the zucchini until golden brown but slightly crisp inside. Transfer to a serving bowl.
Step 3
Add the thinly sliced garlic and sauté until golden. Transfer to the zucchini.
Step 4
Lightly drizzle with vinegar, season with salt and pepper, and sprinkle with parsley. Gently toss and cool to room temperature. Before serving, sprinkle with cheese shavings.
