  • Zucchini - 3 pieces
  • Lemon Zest - 1 tablespoon
  • Feta cheese - 3.5 oz
  • Pine nuts - 3 tablespoons
  • Red Chili Pepper - 1 piece
  • Fresh Mint - 1 bunch

Step by Step guide

Step 1

Brush a skillet with a small amount of oil and heat it. Slice the zucchini into thin rounds, place them in the skillet, and sauté for 2-3 minutes on each side until cooked through. Keep warm while preparing the rest.

Step 2

Arrange on a plate and sprinkle with lemon zest, top with feta cheese, pine nuts, chili pepper, and mint.

Step 3
