Season the prepared grouse, partridge, or capercaillie with salt, place it in a pot with heated oil, and fry on all sides until a golden crust forms.
Step 2
Then turn the bird onto its back and place it in the oven for 15-25 minutes (capercaillie takes 35-45 minutes to cook). During frying, baste the bird with fat using a spoon.
Step 3
When the bird is ready, remove it and cut it in half lengthwise. The capercaillie is cut into 4-6 pieces. You can serve fried potatoes or a mix of vegetables, green salad, red cabbage, pickled fruits, and berries as a side dish.
