Description
The traditional Chinese recipe for this dish involves a long and complex rice cooking technique that pays off in flavor but requires some skill. If you want a more diet-friendly dish or simply don't want to spend much time, just boil the rice and serve the chicken with this side and sauce. It turns out incredibly delicious and simple!!!
Ingredients
- Shallot - 4 pieces
- Poultry - 1 piece
- White Pepper (whole) - 0.5 oz
- Ginger - 1.8 oz
- Salt - to taste
- Rice - 1 cup
- Garlic - 6 cloves
- Sweet Chili Sauce - 3 tablespoons
- Mild Chili Spice - to taste
- Cucumbers - 5 pieces
Step by Step guide
Step 1
Trim the fat from the chicken and set it aside.
Step 2
Bring a large pot of water to a boil.
Step 3
Stuff the chicken with whole heads of peeled shallots and slices of peeled ginger. You can sew the chicken or secure it with toothpicks to prevent the filling from spilling out during cooking.
Step 4
Place the chicken in the boiling water, add a few white peppercorns, season with salt, and reduce the heat. The chicken should not boil during cooking, so medium heat will suffice.
Step 5
After about 40–50 minutes, the chicken is ready: remove it from the broth and place it in an ice water bath for 10 minutes. Then remove and slice it into strips.
Step 6
Heat a pan, melt the chicken fat in it, and sauté the finely chopped garlic.
Step 7
Add the rice and fry it until golden.
Step 8
Pour chicken broth over the rice, cover with a lid, and cook on low heat until done.
Step 9
For the sauce, mix two finely chopped garlic cloves, sweet chili sauce, a bit of chili pepper, and two tablespoons of chicken broth.
Step 10
Peel the cucumbers, slice them lengthwise, and arrange them on a plate with the chicken.
