Hake with White Wine Sauce

Ingredients

  • Hake - 2 lbs
  • Cotton Oil - 17 fl oz
  • Salad Potatoes - 2 pieces
  • Wheat Flour - 1.8 oz
  • White bread - 3.5 oz
  • Olive Oil - 2 tablespoons
  • Onion - 1 head
  • Garlic - 3 cloves
  • Parsley - 3 stems
  • Chopped almonds - 8 pieces
  • Dry White Wine - 9 fl oz
  • Salt - to taste

Step by Step guide

Step 1

In a skillet, heat the corn oil and fry small slices of crustless bread on both sides until golden brown. Remove the bread from the skillet and place it in a separate dish.

Step 2

Now add thinly sliced potatoes to the skillet and cook for about 5–10 minutes until they are soft but not browned. Remove the potatoes with a slotted spoon and transfer them to a baking dish.

Step 3

Cut the hake fillet into 4 portions. Lightly season the hake fillets with salt on both sides, coat them in flour, and shake off the excess. Place the hake fillets in the skillet one by one and fry until golden brown. Remove the fillets from the skillet with a wide knife and place them on the potatoes.

Step 4

Preheat the oven to 356°F.

Step 5

To make the sauce, heat oil in the skillet, add chopped onion, and cook over low heat, stirring occasionally, for about 8 minutes until the onion just begins to turn golden.

Step 6

In a mortar, grind the fried bread, garlic, parsley, and almonds, and add to the skillet. Pour in the wine and 5 tablespoons of water, lightly season with salt, and cook for 5 minutes. Blend the prepared mixture and pour it over the hake fillets.

Step 7

Place in the preheated oven for 10 minutes and serve immediately.
