Description

This dish should be served with chopsticks for easy unwrapping of the paper envelopes.

Ingredients

  • Halibut - 14.1 oz
  • Medium-dry sherry - 2 tablespoons
  • Scallions - 3.5 oz
  • Vegetable Oil - 1 fl oz
  • Grated Ginger Root - to taste
  • Salt - to taste

Step by Step guide

Step 1

Cut the halibut fillet into small pieces, sprinkling each with salt, finely chopped green onions, and ginger.

Step 2

Place each piece on a sheet of paper, drizzle with sherry and oil. Fold the paper into envelopes so that they do not unfold on their own.

Step 3

In a deep pot, heat the vegetable oil to 356°F, using a slotted spoon to dip the envelopes with fish into the oil for three minutes. Drain and place on a warm plate.

Step 4

Garnish with green onion feathers and serve immediately.
