Halibut baked in prosciutto
Ingredients
- Olive Oil - 1 fl oz
- Courgette - 1 piece
- Orange Bell Peppers - 1 piece
- Thyme - 0 fl oz
- Salt - to taste
- Green peppercorns - to taste
- Prosciutto - 10 slices
- Halibut - 2 pieces
- Sour Cream - 1 fl oz
- Citrus Zest Mix - 0 fl oz
Step by Step guide
Step 1
Preheat the oven to 428°F.
Step 2
In 1 tablespoon of olive oil, sauté diced zucchini. After 3 minutes, add diced red bell pepper of the same size. Sauté until partially cooked. Remove from heat and season with finely chopped thyme leaves.
Step 3
Cover the work surface with plastic wrap, slightly larger than the size of the fillet.
Step 4
Lay the prosciutto in overlapping slices in the center of the wrap to form a rectangle that can later be rolled around the fillet.
Step 5
Place 1 fillet in the center of the prosciutto rectangle, add 1 tablespoon of sour cream on top, and about 3 tablespoons of the zucchini and pepper mixture. Sprinkle with lemon zest. Place the second fillet on top of the first and gently press down like a sandwich.
Step 6
Then, using the plastic wrap, roll it up so that the fish is completely enclosed in the prosciutto.
Step 7
Tie the roll with kitchen twine.
Step 8
In an oven-safe skillet, heat 1 tablespoon of olive oil and sear the roll on each side for 2–3 minutes until golden brown. Remove from heat, season with remaining thyme, drizzle with olive oil, salt, and pepper, and place in the oven.
Step 9
Depending on the thickness of the fillet, the fish bakes for approximately 7–10 minutes. You can check for doneness by piercing the thickest part of the fillet with a thin knife—the knife should go in with slight resistance.
Step 10
While the fish is cooking, reheat the remaining vegetables and use them as a side dish.
