A vegetable salad with feta makes a perfect side dish.

Ingredients

  • Halibut - 17.6 oz
  • Thyme - 6 sprigs
  • Olive Oil - to taste
  • Orange zest - 20 pieces
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Remove bones from the fillet (if there are any), and cut into steaks (about 2 cm thick).

Step 2

Use a sharp knife to peel the zest from the orange, avoiding the white pith, and cut it into strips.

Step 3

Strip the leaves from the thyme sprigs, drizzle with sunflower oil, and season with pepper. Dip the fish steaks into the mixture.

Step 4

Create a foil envelope for the fish, placing strips of zest (6–8 strips for each steak) on the 'bottom'. Place a steak on top of the zest, drizzle with oil, and close the envelope.

Step 5

Preheat the oven. While it heats up to 392°F, the steaks will marinate.

Step 6

Place the envelopes in the oven for 5 minutes.
