- Butter - 2 tablespoons
- Halibut - 21.2 oz
- Dry White Wine - 3 fl oz
- Water - 5 fl oz
- Bouillon cube - 1 piece
- Wheat Flour - 1 teaspoon
- Cream - 3 fl oz
- Frozen green bean pods - 7.9 oz
- Onion - ½ head
Step by Step guide
Step 1
Prepare the sauce: bring water and wine to a boil, add the bouillon cube, then the peas, and cook for five minutes. Remove from heat, cool, and strain the peas along with the liquid through a sieve.
Step 2
Mix the flour and cream and combine with the pea puree. Add salt, stir in the sherry, and finely chopped onion.
Step 3
Cut the fish into four portions, season with salt and pepper. Sear each piece on both sides until golden brown.
Step 4
Place the fish on four warm plates, drizzle with sauce, and garnish with lemon wedges.
