- Cream 22% - 2.1 oz
- Parmesan Cheese - 0.4 oz
- Garlic - 0 oz
- Fish Oil - 3.5 oz
- Celery salt - 0.7 oz
- Shallot - 1.4 oz
- Vegetable Oil - 0 fl oz
- Dry White Wine - 0 fl oz
- Wasabi - 0.2 oz
- Flying fish roe - 0.2 oz
Step by Step guide
Step 1
For the sauce, sauté the onion and celery. Add the white wine, reduce by half, and pour in the fish stock. Cook until reduced to one-third. Add the cream, strain through a sieve, and cook until thickened.
Step 2
Rub the fish with sea salt, dip in flour, and shake off the excess. Sauté until cooked in olive oil.
Step 3
For the gratin, slice the potatoes into rounds and arrange them in a fan shape on parchment paper. Season with salt. Rub with garlic. Drizzle with cream and top with grated Parmesan cheese. Bake until golden brown in the oven at 356°F for 15 minutes.
