Description
Purple potatoes are increasingly found at markets and on the shelves of grocery stores, but if you can't find them, regular potatoes will do just fine. The purple tubers are for a pop of color, rather than for flavor.
Ingredients
- Halibut - 6.7 oz
- Sweet Potato - 4.2 oz
- Yogurt powder - 7 fl oz
- Cilantro - 0.4 oz
- Mild Chili Spice - 0.1 oz
- Dill - 0.1 oz
- Curry - 0 oz
- Leek - 0.2 oz
- Salt - to taste
- Vegetable Oil - 1 fl oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Slice 20 grams of potato into thin rounds and fry them in hot oil for two minutes. Place the chips on a paper towel to absorb any excess oil.
Step 2
Boil the remaining potatoes and mash them with a fork, keeping some texture: you should end up with small chunks.
Step 3
Sear the halibut in oil until it develops a light golden crust on both sides. Season with salt and pepper to taste.
Step 4
Mix the yogurt, finely chopped cilantro, scallions, chili pepper, and curry until smooth. Dress the potatoes with half of the sauce.
Step 5
Arrange the fried fish and potatoes on a plate, garnishing with chips and dill. Serve with the remaining sauce.
