Halibut with Rice Noodles and Pineapple Sauce
Ingredients
- Halibut - 24.7 oz
- Rice Noodles - 8.1 oz
- Dill - 1 bunch
- Scallions - 1 bunch
- Roasted Peanuts - to taste
- Vegetable Oil - ½ cup
- Fish Oil - ¾ cup
- Turmeric - 1 teaspoon
- Pineapple - 5.3 oz
- Garlic - 2 cloves
- Thai Bird's Eye Chili - 1 piece
- Lime Juice - 2 teaspoons
- Sugar - 1 tablespoon
Step by Step guide
Step 1
Mix the oil, 2 tablespoons of fish sauce, and turmeric. Cut the fish into 5 cm pieces. Place in a bowl with the marinade, mix, and let sit for thirty minutes.
Step 2
Bring a pot of water to a boil. In a blender, blend half a cup of diced pineapple, 2 cloves of garlic, deseeded chili, lime juice, 1 tablespoon of sugar, and 0.5 cup of fish sauce. Add the noodles to the pot and cook for two minutes. Drain and divide among four plates.
Step 3
Heat a large skillet well, add half of the fish. Sear for one minute, flip, and cook for another twenty seconds. Add half of the chopped herbs and sauté with the fish, then divide between two plates. Sear the remaining fish and herbs in the same way.
Step 4
Drizzle each serving with two tablespoons of sauce and sprinkle with crushed peanuts. Serve the remaining sauce on the side.
