Halibut with Tomatoes
Ingredients
- Halibut - 15.9 oz
- Baking Tomatoes - 14.1 oz
- Onion - 1 head
- Vegetable Oil - 4 tablespoons
- Passata Tomato Sauce - 1 tablespoon
- Fish Oil - 1 cup
- Lemon - 1 piece
- Orange Bell Peppers - 1 piece
- Parsley - 1 bunch
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Rinse the halibut fillet, cut it into 4 portions, and fry in oil for three minutes on each side, seasoning with salt and pepper. Transfer the fish to a non-stick dish and bake in a preheated oven at 356°F for no more than six minutes.
Step 2
Finely chop the onion and sauté in the remaining oil. Add the tomato paste, sliced canned tomatoes, hot broth, and julienned bell pepper. Sauté for another four minutes.
Step 3
Pour the sauce into a deep dish, place the pieces of fish on top, and garnish with lemon slices and herbs.
