Ingredients
- Pineapple - 2 pieces
- Sugar - 21.2 oz
- Water - 16 fl oz
- Mustard Greens - 2 fl oz
- Smoked Ham on the Bone - 10 lbs
- Red Grape Juice - 8 fl oz
- Ground clove - 40 pieces
- Dijon Mustard - to taste
Step by Step guide
Step 1
Peel the pineapples and cut them into cubes (0.8 cm). Place in a large pot, add water and sugar; bring to a boil. Reduce heat, stir, and skim off foam. Cook until the pineapples become translucent and the mixture reduces to 4 cups, about 60 to 80 minutes. Transfer to a large dish and cool. Add mustard. (The glaze will keep in the refrigerator for 3 days.)
Step 2
Preheat the oven to 350°F (175°C). Remove the skin from the ham. The fat should not be more than 0.5 cm thick. Score the ham with a sharp knife into diamonds about 3 cm apart. Insert a clove into the center of each diamond. Place the ham, scored side down, on a baking sheet, and drizzle with wine on top. Cover with half of the glaze. Cover with parchment paper, then foil, and cook for about an hour; remove from the oven.
Step 3
Increase the temperature to 425°F (220°C). Remove the parchment and foil, and drizzle with the remaining glaze. Cook until a golden-brown crust forms, about 40 to 45 minutes. (Cover with foil if it darkens too much). Transfer to a cutting board; let rest for about 30 minutes before slicing. Garnish with grainy mustard and pineapple cubes.
