Description
This dish is made using lightly smoked pork ham. Warning: diet cola is not suitable, only the regular kind! For the glaze, you will need mustard powder, brown sugar, and molasses. If the ham is very salty, it is better to prepare it this way: soak it in cold water, bring to a boil, and drain.
Ingredients
- Pork Blood - 70.5 oz
- Coca-Cola - 67 fl oz
- Onion - 1 piece
- Mustard Greens - 2 teaspoons
- Sugar - 2 tablespoons
- Ground clove - 1.8 oz
- Light Molasses - 1 tablespoon
Step by Step guide
Step 1
Chop the onion. Place the ham in a deep skillet skin side down, add the onion, pour in the Coca-Cola, and bring to a boil.
Step 2
Reduce the heat, cover, and simmer for 2.5 hours. If the ham is from the refrigerator, increase the cooking time by 15 minutes.
Step 3
Preheat the oven to 464°F. Remove the ham from the skillet. Remove the skin, and score the fat diagonally to create a grid pattern. Insert cloves into the intersections of the cuts, brush the surface with molasses, and sprinkle with sugar and mustard.
Step 4
Line a baking sheet with foil. Bake in the oven for 10–15 minutes.
