Ingredients
- Cheese Tortellini - 8.8 oz
- Olive Oil - ¼ cup
- Red Wine Vinegar - 2 tablespoons
- Fresh Rose Hips - 2 teaspoons
- Garlic - 1 clove
- Sugar - ½ teaspoon
- Ham - 8.8 oz
- Pickled Chanterelles - 3.9 oz
- Orange Bell Peppers - 1 piece
- Pitted olives - ½ cup
- Scallions - 450 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Grated Pecorino Pepato Cheese - to taste
Step by Step guide
Step 1
Bring lightly salted water to a boil in a pot. Add the tortellini and cook until done. Drain and rinse under cold water.
Step 2
In a large bowl, combine olive oil, vinegar, chopped rosemary, minced garlic, and sugar. Add the tortellini, diced ham, finely chopped bell pepper, sliced mushrooms, chopped olives, and green onions. Season with salt and pepper and mix well.
Step 3
Cover with plastic wrap and let sit at room temperature for 20-30 minutes. Sprinkle with Parmesan and serve.
