Description
Authentic harissa is made only with unrefined extra virgin cold-pressed olive oil.
Ingredients
- Mild Chili Spice - 1 piece
- Garlic - 1 clove
- Olive Oil - 3 fl oz
- Coarse Salt - 1 tablespoon
- Toasted Cumin Seeds - 1.8 oz
- Ground coriander - 1 teaspoon
Step by Step guide
Step 1
Preheat the oven to 180ºC (350ºF). Grease a baking sheet with vegetable oil. Wash the peppers thoroughly and dry them. Place them on the baking sheet, drizzle with 2 tablespoons of vegetable oil, cover with foil, and put in the oven for 40 minutes. Remove the peppers from the oven and let them cool to room temperature. Cut each pepper in half lengthwise, remove the seeds and stems.
Step 2
Blend the peppers into a chunky puree using a blender or by hand.
Step 3
Peel the garlic and finely chop it. In a bowl, combine the blended peppers and garlic. Add cumin, coriander, and salt, and mix thoroughly.
Step 4
Transfer the harissa to a clean jar. Pour olive oil over it.
