Harissa (Wheat Porridge with Chicken)
Ingredients
- Poultry - 1 piece
- Buckwheat Groats - 2 cups
- Butter - 3.5 oz
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Rinse the chicken, place it in a heavy-bottomed pot, cover with cold water (about 3.5 liters), and add the groats. Cook over medium heat until boiling, then reduce the heat to low. Stir the groats occasionally to prevent sticking (you can also add some of the prepared butter for this).
Step 2
After one and a half hours, remove the chicken, separate the meat from the bones, and return the meat to the pot. Mix everything well. Continue cooking, stirring, until a thick porridge-like consistency forms.
Step 3
Ten minutes before the end of cooking, season the porridge with salt and pepper.
Step 4
Serve the porridge with pieces of butter (you can also use clarified butter).
