Hawaiian Chicken Skewers

Ingredients

  • Chicken fillet - 12.3 oz
  • Pineapple - 7.1 oz
  • Soy Sauce - ½ cup
  • Vegetable Oil - ¼ cup
  • Brown Sugar - 1 tablespoon
  • Ground Dried Garlic - 1 teaspoon
  • Grated Ginger Root - 2 teaspoons
  • English Dry Mustard - 1 teaspoon
  • Ground Black Pepper - ¼ teaspoon
  • Orange Bell Peppers - 1 piece
  • Morels - 12 pieces
  • Marinated cherries - 18 pieces
  • Rice - to taste

Step by Step guide

Step 1

Place the chicken breasts in a large shallow dish.

Step 2

Drain the juice from the can of pineapple, reserving ½ cup of juice.

Step 3

Set the pineapple pieces aside.

Step 4

In a small saucepan, combine ½ cup of pineapple juice, soy sauce, vegetable oil, brown sugar, garlic powder, grated ginger, mustard, and pepper. Place the saucepan over heat and bring to a boil.

Step 5

Reduce the heat and simmer for 5 minutes.

Step 6

Pour the marinade over the chicken breasts.

Step 7

Cover and refrigerate for 1 hour.

Step 8

Remove the chicken from the marinade, do not discard the marinade, it will be used later.

Step 9

Thread the chicken, pineapple pieces, green bell pepper, mushrooms, and tomatoes onto skewers.

Step 10

Cook over hot coals for 20 minutes or until the chicken is cooked through.

Step 11

Turn and baste frequently with the marinade.

Step 12

Serve the cooked chicken pieces with vegetables and hot rice. Enjoy your meal!
