Description
Hedgehogs in Sour Cream Sauce — A Childhood Recipe
Ingredients
- Rice - ½ cup
- Ground meat - 17.6 oz
- Spanish onions - 2 pieces
- Natural Yogurt - 12.3 oz
- Passata Tomato Sauce - 5.3 oz
- Chicken Egg - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
- Bay leaf - 1 piece
Step by Step guide
Step 1
Cook the rice until half done, mix it with the ground meat, and add the egg.
Step 2
Roll into balls with a diameter of 4-5 centimeters. Coat them in flour.
Step 3
Quickly fry the balls in well-heated vegetable oil in a deep skillet until they slightly firm up. Transfer to a deep skillet (if fried in another one).
Step 4
Mix the yogurt (I always use plain yogurt) or sour cream with the tomato paste, season with salt and pepper, and add the bay leaf. Pour the resulting sauce over the balls in the skillet — there should be enough sauce to almost cover the hedgehogs completely. Simmer for 15-20 minutes on low heat with the lid on.
Step 5
Finely chop the red onions. Sprinkle the onions over the hedgehogs in the sauce. Bake for no more than five more minutes. Serve. The onions will be tender and crispy. The hedgehogs in the sauce will be tender.
