Ingredients
- Turkey - 1 piece
- Breadcrumbs - 7.9 oz
- Parsley - 1 bunch
- Thyme - ½ bunch
- Marjoram - ½ bunch
- Green peppercorns - ½ teaspoon
- Cayenne Pepper - ½ teaspoon
- Salt - 1 teaspoon
- Ground Nutmeg - ½ teaspoon
- Butter - 8.8 oz
- Whole egg - 2 pieces
Step by Step guide
Step 1
For the stuffing, thoroughly mix the breadcrumbs, finely chopped leaves of fresh thyme, parsley, marjoram, and spices in a large bowl.
Step 2
Melt the butter in a water bath and pour part of it (about 125 g) into the stuffing mixture. Knead with wet hands until a homogeneous mass is formed. Then add the egg yolks and knead thoroughly again.
Step 3
Rinse the cleaned turkey (5-6 kg) under cold running water and dry with paper towels. Rinse your hands in cold water and, without drying them, carefully slide your fingers under the skin around the breast area. Gradually move and separate the skin from the meat until you reach the backbone, stopping in the area of the spine.
Step 4
Fill the cavities formed between the skin and the turkey meat with the prepared stuffing. Carefully pull the skin over the body, tucking the edges inside the turkey. Tie the legs tightly with kitchen twine.
Step 5
Grease a small sheet of parchment paper with melted butter, place it on the turkey breast, and secure it by tying the body with twine in a cross pattern. Coat the turkey skin with the remaining melted butter.
Step 6
Place the turkey breast side down in a baking dish or on a baking sheet and put it on the middle rack of an oven preheated to 356°F. Roast for about 3 hours and 20 minutes to 4 hours (depending on the size of the turkey). Baste the turkey with the juices and melted butter every 15 minutes.
Step 7
Check the turkey's readiness by occasionally piercing the meat deeply with a wooden toothpick. Remove the parchment paper from the turkey about 20 minutes before taking it out of the oven and allow it to brown.
Step 8
Let the turkey cool slightly at room temperature (about 15 minutes) and serve on a large platter, slicing the breast into pieces.
