Herb-Crusted Lamb Rack
Ingredients
- Vegetable Oil - 3 tablespoons
- Salt - 1 teaspoon
- Green peppercorns - 1 teaspoon
- Thyme - to taste
- Oregano - to taste
- Marjoram - to taste
- Rosemary - to taste
- Rack of Lamb - 2 lbs
Step by Step guide
Step 1
Trim excess fat and membranes from the lamb. Clean the edges of the rib bones.
Step 2
Rub the cleaned lamb rack with olive oil, season with salt and pepper, and sprinkle with spices. Let it marinate in a warm place for 2 hours.
Step 3
Preheat the oven to 392°F. Sear the lamb in olive oil for 4 minutes.
Step 4
Transfer the meat to a baking tray, meat side up, and roast for 15 minutes. Remove from the oven, cover with foil, and let rest for another 10–15 minutes. Slice into portions and serve.
