Description

Instead of toast, this salad can include croutons and/or nuts. That is, the cheese slices are not placed on bread but are coated in a sort of breading. To do this, mix dry bread crumbs and chopped walnuts. Whisk 1 egg with 1 tablespoon of water. Dip each cheese slice into this mixture, then into the bread-nut coating. Place the cheese on a greased baking sheet and bake for 6 minutes. After that, arrange the cheese, as in the main recipe, on a bed of greens divided among 6 plates.

Ingredients

  • Shallot - 1 piece
  • Garlic - 1 clove
  • Meyer Lemon Juice - 1 fl oz
  • Thyme - 0.4 oz
  • Dijon Mustard - 0 fl oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • White bread - 6 pieces
  • Goat cheese - 7.9 oz
  • Corn Salad - 15.9 oz
  • Parsley - 1.6 oz

Step by Step guide

Step 1

In a small bowl, mix together the chopped shallot, lemon juice, garlic, thyme leaves, and mustard. Pour in walnut oil while continuing to mix, whisking until as homogeneous as possible. Season with salt and pepper.

Step 2

Preheat the grill and toast the bread. Drizzle with oil, season with salt and pepper. Cut the goat cheese into 6 slices. Place a piece of cheese on each toast. Return everything to the grill and hold for another 2 minutes, until the cheese starts to melt slightly.

Step 3

While the cheese and bread are baking, mix the parsley with the salad leaves. Dress the greens with the sauce, seasoning with salt and pepper.

Step 4

Arrange the greens and toasts with cheese on 6 plates. Serve immediately while the toasts are still warm.
