- Amaranth flour - 1 tablespoon
- Crème fraîche - 3 tablespoons
- Grated horseradish - 2 tablespoons
- White Wine Vinegar - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
- Watercress - 19.8 oz
- Brussels Sprouts - to taste
- Flax seeds - 4 teaspoons
Step by Step guide
Step 1
To prepare the herbs with horseradish, toast the flax seeds in a large skillet over medium heat, stirring frequently, until fragrant (about two minutes). Transfer to a small bowl. Now toast the amaranth until fragrant (about two minutes), add it to the flax seeds, and let it cool.
Step 2
In a large bowl, mix the crème fraîche, horseradish, and vinegar. Drizzle with a little water if necessary. Season with salt and pepper, add the herbs and flowers, and mix thoroughly. Top with the flax seeds and amaranth, and serve.
