Description
This recipe is taken from a book on delicious vegan food. The biggest trick is to manage to make this salad without herring while simulating its presence. How to achieve this? It's very simple. Just use the same marinade as for herring, but substitute plant-based ingredients. For example, mushrooms. Oyster mushrooms are ideal as they have a firm texture and a uniform white color. If you can't find them, fresh champignons will do. Choose the strongest mushrooms, and the 'Herring Under a Fur Coat' will be just like the real thing.
Ingredients
- Beetroot - 7.1 oz
- Carrot - 5.6 oz
- Apple - 5.6 oz
- Mayonnaise - 5.6 oz
- Oyster Mushrooms - 120 pieces
- Vegetable Oil - 3 fl oz
- Soy Sauce - 1 fl oz
- Coriander essential oil - 1 teaspoon
- Dill - ½ bunch
- Salt - to taste
Step by Step guide
Step 1
Cut the mushrooms into elongated rectangles that mimic the shape of herring pieces in a jar.
Step 2
Mix vegetable oil, soy sauce, coriander, vinegar, dill, and salt. Heat to 35–104°F, then cool.
Step 3
Place the mushroom pieces in the marinade and leave them for 20–30 minutes. Then drain the mushrooms in a colander to get rid of excess liquid.
Step 4
Meanwhile, prepare the other ingredients: separately grate the boiled beetroot, carrot, and fresh apple on a coarse grater.
Step 5
In the bottom of a salad bowl or culinary ring, layer the mushroom pieces tightly, spread vegan mayonnaise, then add a layer of grated apple, generously coat with mayonnaise, followed by a layer of carrot, more mayonnaise, a layer of beetroot, and finish with mayonnaise on top.
