Description

Fur Coat 2014. I make this dish once a year for New Year's. After much thought about what always bothered me in herring salad, I realized it was the chunks of herring. So this year, I blended everything except for the apples, onions, and cucumbers — I grated them into fine strips on a grater, which added a nice crunch to the salad. Everything else: herring, beets, eggs, and carrots were completely blended. The result, though expected, exceeded all expectations. Incredibly delicious and tender. Also, the beets must be drained in a colander for several hours. The salad must be allowed to sit. Thanks to the pickled cucumbers, the onions and herring get a bit marinated — it turns out very tasty and light, without the heaviness of potatoes. Homemade mayonnaise without eggs is a wonderful thing; it regularly saves the day, requiring only an immersion blender. See the mayonnaise recipe.

Ingredients

  • Lightly Salted Red Fish - 2 pieces
  • Yellow Beets - 2 pieces
  • Apple - 2 pieces
  • Carrot - 5 pieces
  • Pickled Cauliflower - 5 pieces
  • Onion - 1 piece
  • Chicken Egg - 4 pieces
  • Mayonnaise - 17.6 oz

Step by Step guide

Step 1

Boil 2-3 medium beets and carrots and grate them on a coarse grater — place in different containers.

Step 2

Cut the herring fillet into thin strips and set aside.

Step 3

Finely chop the onion.

Step 4

Cut 2 large sweet apples into thin strips or grate them.

Step 5

Grate 4-5 pickled cucumbers.

Step 6

Boil 2 eggs hard and chop them.

Step 7

Assemble the salad in layers: 1 — beets, sprinkle with salt and spread with mayonnaise; 2 — carrots, sprinkle with salt and pepper, and spread with mayonnaise; 3 — apples, spread with mayonnaise; 4 — cucumbers with onions, spread with mayonnaise; 5 — herring, spread with mayonnaise. Repeat the layers 2-3 times.

Step 8
