Ingredients
- Fillet of Sturgeon - 6 pieces
- Nigella Seeds - 1 teaspoon
- Bay leaf - 2 pieces
- White Pepper (whole) - to taste
- Horseradish Leaves - 1.8 oz
- Sugar - 3.5 oz
- Apple Cider Vinegar - 8.8 oz
- Shallot - 2 pieces
- Salt - to taste
- Creamy Horseradish - 1.8 oz
- Natural Yogurt - 7.1 oz
- Dill - 2 tablespoons
- Olive Oil - 3 fl oz
- Courgette - 1 piece
Step by Step guide
Step 1
For the marinade, combine fennel seeds, pepper, finely chopped shallots, grated horseradish, bay leaves, vinegar, sugar, and salt in a saucepan. Bring to a boil, then simmer for about 2 minutes. Pack the fillets tightly into a dish. Pour the marinade over the fish. Cover with plastic wrap and refrigerate for 10 hours.
Step 2
Remove the fish and let it sit at room temperature for a while. Mix 50 ml of the marinade with oil and dill. Peel the cucumber, dice it, and add it to the dressing.
Step 3
Combine the yogurt and creamy horseradish. Drizzle with marinade and serve with yogurt and whole grain or rye bread.
