- Buckwheat Groats - 2 spoons
- Thyme - 3 stalks
- Fresh Rose Hips - 3 stalks
- Mild Chili Spice - 2 pieces
- Garlic - 3 heads
- Ocean salt - 1 tablespoon
- Ground Black Pepper - 1 tablespoon
- Beef - 2 lbs
- Dijon Mustard - 3 spoons
Step by Step guide
Step 1
Remove the meat from the refrigerator a few hours before cooking and let it come to room temperature.
Step 2
For the marinade, mix together mustard, honey, thyme leaves, rosemary, finely chopped garlic, chili pepper, black pepper, and salt.
Step 3
Thoroughly rub the meat with the prepared marinade and sear the entire piece in a hot skillet on all sides until golden brown (about 5 minutes for the entire searing process).
Step 4
Transfer the meat to a baking tray, cover it with foil, and place it in a preheated oven at 266°F for 1.5 hours.
Step 5
Check the readiness with a meat thermometer (the ideal temperature for cooked roast beef is 126°F).
Step 6
Remove the meat from the oven and let it rest for about 20 minutes without removing the foil.
