Homemade Cottage Cheese
Ingredients
- Milk - 50 fl oz
Step by Step guide
Step 1
Prepare the necessary ingredients. Farm-fresh milk is more suitable for making cottage cheese.
Step 2
Place a 3-liter jar of milk in a cool place for about 3 hours to allow the cream to rise to the top.
Step 3
Thoroughly wash a 1.5-liter jar with baking soda.
Step 4
Fill the 1.5-liter jar with milk. Use the remaining milk in the 3-liter jar as desired.
Step 5
Leave the jar of milk at room temperature to sour for about 6-8 hours.
Step 6
The milk must sour well; otherwise, the cottage cheese may not turn out properly.
Step 7
Line the bottom of a pot with a kitchen towel. Place the jar of soured milk in the pot. Fill the pot with room temperature water so that the jar is almost completely submerged, leaving about 1.5 cm from the top.
Step 8
Put the pot on the stove, cover it with a lid, and heat on low for about 40 minutes. Once bubbles start to appear, let it heat for another 10 minutes, but do not bring it to a boil, or the cottage cheese may become tough.
Step 9
Remove the pot with the milk from the heat, let it cool to room temperature, and take the jar out of the water.
Step 10
Pour the milk into a colander lined with cheesecloth to drain the whey.
Step 11
To make the cottage cheese firmer, you can place a small weight on top and leave it in a cool place for about an hour.
Step 12
The finished cottage cheese can be eaten as a standalone dish or used in other recipes. The whey can be used for making dough-based dishes (pancakes, crepes, dumplings, etc.).
