Description

You should end up with 60–70 pieces, depending on the size. The dumplings need to be cooked immediately or frozen.

Ingredients

  • Chicken Egg - 1 piece
  • Onion - 1 piece
  • Garlic - 3 cloves
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Wheat Flour - 17.6 oz
  • Water - 8 fl oz
  • Beef - 17.6 oz
  • Pork Neck - 17.6 oz

Step by Step guide

Step 1

Sift the flour into a mound. Make a well in the center and pour an egg into it. Gradually mix the flour from the edges into the center, adding water as needed. If you're worried about doing this directly on the table, use a large, wide bowl, although it should work out fine the first time. Knead the dough until it becomes elastic. Cover the dough with a damp towel and let it rest for half an hour; it will become more elastic and easier to roll out.

Step 2

Meanwhile, prepare the filling: cut the beef and pork into chunks, add garlic and chopped onion, and blend in a food processor until it becomes ground meat. Season with salt and pepper.

Step 3

Sprinkle a large board with flour and take 1/4 of the dough, rolling it out thinly. To remove excess flour, moisten your hands with cold water and run them over the dough. Cut out circles of your desired size (using a special cutter or simply a thin glass), place a teaspoon of filling in the center, and pinch the edges together. You can leave it in this shape, or you can fold and pinch two edges together to create a "ear".

Step 4

Cook the dumplings in a large pot of salted water or broth for 8–10 minutes.
