Description
A recipe from John Smith, bar manager of a popular American restaurant. This is a variation of classic limoncello, incorporating grapefruit along with lemon. It’s an infusion for those who don’t enjoy overly sweet drinks and appreciate a noble bitterness. Pay attention to the milk clarification technique—it will be useful in other infusions to make them crystal-clear.
Ingredients
- Grapefruits - 2 lbs
- Sugar - 5.3 oz
- Vanilla Pod - 1 piece
- Vodka - 23 fl oz
- Water - 5 fl oz
- Meyer Lemon Juice - 5 fl oz
- Milk - 5 fl oz
Step by Step guide
Step 1
Grate the grapefruit zest using a fine grater, avoiding the white pith.
Step 2
Place the zest in a suitable container, cover it with vodka, seal it, and leave it in a dark place at room temperature for a week.
Step 3
Then uncork it, add a vanilla pod that has been previously scraped of its seeds, and let it steep for another 2 days, shaking it daily.
Step 4
Strain the infusion through a sieve, and place the remaining zest into a saucepan. Add sugar and water.
Step 5
Heat until the sugar is completely dissolved, then remove from heat and let it cool.
Step 6
Mix the resulting syrup with the infusion and fresh lemon juice. Let it sit for 1 day.
Step 7
Then pour the milk into the infusion. After about 2 hours, when the milk curdles, strain the infusion through paper filter bags.
Step 8
Pour the finished limoncello into bottles, seal them, and serve chilled.
