Description

A homemade alternative to the most popular sauce in the world. Mastering the art of making ketchup at home is worth it for the same reasons you would whip mayonnaise by hand and avoid using bouillon cubes— you will know for sure that nothing artificial has been added. Moreover, the homemade recipe is easily adjustable to suit your personal taste, allowing you to create the perfect balance of tomato tanginess, spicy heat, and cane sugar just for you. Ketchup is incredibly versatile— it makes nearly everything taste better.

Ingredients

  • Onion - 2 heads
  • Tomatoes - 4 lbs
  • Garlic - 2 cloves
  • Red Wine Vinegar - 5 fl oz
  • Water - 3 fl oz
  • Green peppercorns - ½ spoons
  • Mace - 1 piece
  • Dried Chili Pepper - ½ spoons
  • Bay leaf - 2 pieces
  • Clove - 4 pieces
  • Brown Sugar - 1 tablespoon

Step by Step guide

Step 1

Peel and finely chop the onion and garlic. Peel the tomatoes and chop them roughly. In a large saucepan, combine the onion, garlic, tomatoes, water, and 50 ml of vinegar, and place it over medium heat. Cook for 40 minutes, stirring occasionally, until the vegetables turn into a mash.

Step 2

Meanwhile, in another saucepan, pour in the remaining vinegar, add black pepper, cloves, chili, bay leaf, and simmer over low heat for 10 minutes. Remove from heat and set aside for a while.

Step 3

In a blender, puree the tomatoes, then strain the mixture back into the saucepan through a sieve. The seeds and any remaining bits of skin should be left in the sieve.

Step 4

Add vinegar and sugar to a saucepan and place it over medium heat. Bring to a boil, stirring constantly. Cook, maintaining a gentle simmer, until the sauce thickens to a ketchup-like consistency. You should end up with about 500 milliliters of sauce.

Step 5

Remove the finished ketchup from the heat, add salt, and stir. Using a funnel, pour it into a sterilized bottle with a narrow neck.
