- Whole egg - 4 pieces
- Olive Oil - 17 fl oz
- Salt - 2 teaspoons
- Sugar - 1 teaspoon
- Mustard Greens - 2 teaspoons
- Malt Vinegar - 2 tablespoons
Step by Step guide
Step 1
Eggs and oil should be fresh and at the same room temperature. You will need only the egg yolk, which should be carefully separated from the white. It's better to add salt at the beginning. Whisk the egg yolk and mustard, and you can add ground black pepper. It is even believed that this mixture should always be stirred in the same direction.
Step 2
Slowly add the olive oil drop by drop to the mixture while constantly stirring. Once the mixture starts to thicken, you can pour the oil in a thin stream. The key is not to go too fast.
Step 3
When the sauce becomes homogeneous and starts to pull away from the sides of the bowl, add 2 tablespoons of wine vinegar (preferably 3%) and mix. The mayonnaise will turn white and become more liquid.
Step 4
Homemade mayonnaise can be stored in the refrigerator in a tightly sealed jar for no more than three days.
