- Dijon Mustard - 1 tablespoon
- Unrefined Sunflower Oil - 3 fl oz
- Olive Oil - 1 fl oz
- Meyer Lemon Juice - to taste
- Salt - to taste

Prepare all the ingredients.

Crack the egg into a tall glass or jar.

Add the mustard.

Pour in the refined oil.

Add olive oil.

Blend the mixture with an immersion blender.

Whip the mayonnaise once more.

Store the prepared mayonnaise in the refrigerator for up to three days, covering it with plastic wrap directly on the surface to prevent it from drying out. Serve it with salads or use it as a base for sauces.
