- Mustard Greens - 1 teaspoon
- Meyer Lemon Juice - 5 teaspoons
- Sugar - ½ teaspoon
- Salt - ½ teaspoon

Step 1
Whisk the yolks with mustard, sugar, and salt.
Step 2
Carefully add the oil, literally one teaspoon at a time, without stopping whisking.
Step 3
When the mixture becomes homogeneous, you can confidently add all the oil and whisk well.
Step 4
Add the lemon juice and whisk the mixture again. If the mayonnaise seems too thick, you can add a little cold boiled water.
