Ingredients
- Olive Oil - 1 fl oz
- Dijon Mustard - 1 teaspoon
- Vegetable Oil - 5 fl oz
- Chicken Egg - 1 piece
- Salt - ½ teaspoon
- Meyer Lemon Juice - 3 tablespoons
Step by Step guide
Step 1
Pour the olive oil and vegetable oil into a tall, narrow container (you can use any oils you like).
Step 2
Add salt and mustard. Crack the well-washed egg into the oil. Immerse the blender into the mixture so that the egg is inside. Pressing the blender to the bottom, turn it on to high speed and blend. You will witness a chemical reaction — the oil and egg will turn into thick mayonnaise.
Step 3
Then slowly raise the blender upwards to make the mixture homogeneous. At this stage, add vinegar or lemon juice and blend a little more. If you prefer very thick mayonnaise (somewhat resembling jelly), you can stop here; if you want a creamier consistency, add a couple of tablespoons of hot water at the very end.
