- Mustard Greens - ½ teaspoon
- Lemon - ½ piece
- Sugar - 1 teaspoon
- Salt - ½ teaspoon
- Ground Black Pepper - ½ teaspoon
- Herbs - 1 bunch

Step 1
Combine the quail eggs with salt, sugar, pepper, and mustard, place in a blender, and blend for one minute.
Step 2
Then, slowly pour in the vegetable oil while blending until the mixture thickens (this will take a couple of minutes).
Step 3
Finally, add the lemon juice and blend once more.
Step 4
Add herbs to the finished mayonnaise (if desired), transfer to a jar, seal with a lid, and refrigerate.
