- Eggplants - 2 pieces
- Whole egg - 2 pieces
- Meyer Lemon Juice - 1 fl oz
- Unrefined Sunflower Oil - 7 fl oz
- Salt - 0.2 oz
- Ground Black Pepper - 0 oz
Step by Step guide
Step 1
Wash the eggplants and cut off the stems. Wrap them in foil and bake in the oven at 392°F for 20 minutes.
Step 2
Peel the roasted eggplants, let them cool, and place them in a blender cup. Add the yolks, squeeze the juice of half a lemon, season with salt and pepper, and blend.
Step 3
Pour in the oil and mix thoroughly once more. The mayonnaise is ready. Enjoy your meal!
