Description
Homemade oatmeal cookies with beetroot and ginger
Ingredients
- Beetroot - 5.3 oz
- Wheat Flour - 5.3 oz
- Ground Oats - 5.3 oz
- Farm fresh eggs - 2 pieces
- Butter - 3.5 oz
- Grated Ginger Root - 2 teaspoons
- Cinnamon - 2 teaspoons
- Cardamom - 1 teaspoon
- Ground clove - ½ teaspoon
- Baking Powder - 2 tablespoons
- Sugar - 10 teaspoons
- Powdered Sugar - 1 teaspoon
Step by Step guide
Step 1
Mix the flour with the oats, add ginger, cinnamon, cardamom, cloves, and baking powder. Stir well.
Step 2
Chop the beetroot slightly with a blender. In a separate bowl, beat the butter with the sugar using a mixer. Add the eggs and beetroot. Mix well.
Step 3
Combine both mixtures and mix again with a mixer. The dough will be soft and sticky. Wrap it in plastic wrap and place it in the refrigerator for 1 to 1.5 hours.
Step 4
Take the dough out, divide it into 4 parts, put 3 parts back in the refrigerator, and roll out one part very thinly on parchment paper, cutting out shapes with small cookie cutters.
Step 5
Remove the excess dough, transfer the parchment with the cookies to a baking sheet, and place it in an oven preheated to 180°C (350°F). Bake for 5–7 minutes until golden brown. Repeat with the remaining dough. Serve the cookies dusted with powdered sugar mixed with cinnamon.
