Ingredients

  • Wheat Flour - 6.2 oz
  • Semolina - 2.6 oz
  • Whole egg - 9 pieces
  • Egg white - 1 piece
  • Olive Oil - 1 fl oz
  • Red Sicilian shrimp - 3 pieces
  • Artichoke bottoms - 5.3 oz
  • Garlic - 1 head
  • Shallot - 1 head
  • Basil - 2 sprigs
  • Passata Tomato Sauce - 6.3 oz
  • Fish Oil - 5 fl oz
  • Capers - 0.2 oz
  • Salt - to taste
  • Mild Chili Spice - 1 piece
  • Tomatoes - 2 pieces
  • Olive Oil - 2 fl oz

Step by Step guide

Step 1

Prepare the pasta. Sift both types of flour into a mound on the countertop. Make a well in the center of the mound, pour in the egg yolks, add the egg white, a pinch of salt, and 5 ml of olive oil. Knead the dough, gradually incorporating the flour from the inside of the mound outward.

Step 2

Once the ingredients are combined, knead the dough well by hand, wrap it in plastic wrap, and let it rest for 30 minutes.

Step 3

Roll out the dough thinly using a pasta machine and cut it into tagliolini (thin flat noodles).

Step 4

Prepare the sauce. Cut the artichoke into strips about 1–1.5 cm wide and sauté in heated olive oil for 2 minutes, until lightly crispy.

Step 5

Finely chop the shallots and sauté them in olive oil until golden brown.

Step 6

Place the artichokes and shallots in the skillet, add capers, chili pepper, and fish stock.

Step 7

Peel the tomatoes, remove the seeds, dice them into small cubes, and add them to the sauce.

Step 8

Peel the shrimp, leaving the tails on, and add them to the sauce.

Step 9

Pour in the canned tomato sauce and simmer everything together for about 5-7 minutes, until all the ingredients are well combined and the sauce thickens.

Step 10

Remove from heat, stir in the basil, and season with salt and pepper to taste.

Step 11

Cook the tagliolini separately in boiling salted water for 4-5 minutes, until al dente.

Step 12

Transfer the pasta to the skillet with the sauce, allowing it to soak up the flavors, and then mound it onto three serving plates.

Step 13

Drizzle the pasta with the sauce, then place a shrimp on top of each plate.
